Blueberry Strata

The star of the morning, next to my sweet little angel, was the blueberry strata.  I have learned to read all the reviews and comments prior to starting a new recipe and I’m glad I did.  For this one, I took the advice of those before me and really cut down the cream cheese (to almost 1/3rd of what the recipe suggested).  I really wish I had doubled the recipe because it was gone and the guests loved it.  I went ahead and made the blueberry sauce.  I could have skipped here since I keep Smucker’s blueberry syrup in my fridge, but I thought the homemade might be a nice touch.  It was amazing!

Toasted Apple-Pecan Brie Open-Faced Sandwiches

I also decided to get a little fancy with Toasted Apple-Pecan Brie Sandwiches.  These open-faced beauties tasted as good as they look.  Sweet and crunchy, they were a perfect little appetizer.  These were not a make ahead item, but they weren’t stressful or difficult to make either.  As an added bonus, they smelled amazing, so as guests arrived, the sweet sugar aroma was in the air.

I had chosen one breakfast casserole with the kids in mind.  This ham and cheese casserole is pretty much egg, bread, ham, and cheese with corn flakes.  It makes a ton, but I am still not thrilled with the taste

of this one.  I think it’s the swiss cheese which has such a strong flavor.  I have yet to find a breakfast casserole based in egg and cheese that I love yet.  A few with sausage that get that extra kick, but overall I wish I could find one that has flavor, is make ahead friendly and actually gets me to say “yum”.  I probably should start with bacon.

Finally, I had made a sweet onion tart with bacon, honey, and thyme.  This was the second attempt at this tart and both times I was just a little disappointed.  The flavor is awesome, but I can’t find the right consistency with egg to make the filling stick as it should.  It just doesn’t firm up.  This version is a lot more complicated than my friend’s grandmother’s recipe which requires Vidalia onions, butter, Ritz crackers, and cheese.  That one blows this one away.  So much for gourmet.  I guess there are times my taste buds just like the butter and cheese!
