Time Flies When You’re Cooking

Not "The Best Fried Chicken"

I worked in a lot of fast food restaurants as teen and young adult. I started to earn money to go to the movies or eat out, but it ended up helping me get through college. From the prep to the cooking to the serving to the cleaning, it was some of the hardest work I’ve done. I remember how quickly my days flew when I was on the clock.

Around 3pm today, I started thinking about preparing a nice meal for dinner. Then I remembered how I had hinted I might make some lunch for some people at work tomorrow. Within 10 minutes, I had a plan to handle both. 5 hours later, my plan was demolished, I was extremely frustrated at a magazine that promised the best fried chicken ever, and the day was gone.

Super Eats

Homemade Caramel Corn

I had very little stake in this year’s Super Bowl.  I didn’t care about either team, wasn’t hosting a party, and wasn’t even sure I would be back from our weekend getaway to see the game.  Luckily, we did make it back on time and were invited to good friends’ home to watch with them.  I didn’t want to arrive empty-handed and having seen some remarkable ideas on Pinterest, I had a few thoughts on what I could whip up in an hour to bring over.

Ok, it took 1.5 hours and my husband had to entertain the children while Mommy was dealing with boiling water, a super hot oven, and boiling sugar, but I still managed to put together a decent offering!

Potato Pancakes with Zucchini

Potato Pancakes

I’m not Jewish and I won’t even pretend that I know anything about latkes, but I do know this recipe.  My mother often made these for my sister and I.  To this day, it’s one of my favorite meals.  Normally served with applesauce, I tend to eat them alone because I’m not an applesauce fan.

This is the story of the 16 Days of Thanksgiving….what happens when suddenly you realize you’re going to host a party for around 30 people with just a couple of weeks notice. Life doesn’t stop, but the party goes on.

Mark Your Calendars

April 11th is National Cheese Fondue Day here in the States.  The Melting Pot announced that they will be giving away FREE Cheese Fondue as part of their celebration, but I thought I might celebrate early and make my version at home and then go see them on April 11, because that means I can afford the chocolate version! 

Warning:  I never promised this was a healthy meal.  It was just very quick, pretty cheap, and quite filling, not to mention the YUM factor!
